Cauliflower meatballs

My cauliflower was a smaller one, from home so it weighed around 700 gr.
I unwrapped the cauliflower in bunches and let it sit in cold water with vinegar for about 30 minutes.

In the bowl of the robot in which I put the knife, I placed the bunches of cauliflower and ground them until I had a granular mixture (like a couscous).
I emptied the cauliflower in a bowl, and in the robot I put the baked and cleaned pepper and onion. I turned on the robot, I also ground these ingredients.
I put the carrots on the small grater.
Put all the ground vegetables over the cauliflower and add salt, pepper, breadcrumbs, eggs and oregano.
Homogenize well and try to squeeze the composition in a fist. If it doesn't stick at all, add another egg (it depends on how small the vegetables are and how wet they are).
Form larger or smaller meatballs, place in the baking tray and put the tray in the preheated oven at 180 degrees C, for 30 minutes.
They should be slightly brown on top when ready.

Serve with a red garlic sauce or mayonnaise.

P.S I got 42 pieces, which I placed on the large oven tray.

  • 50 g butter

Preheat the oven to 180 degrees.

Boil the quinoa according to the instructions on the package. Break the cauliflower into bunches and cook for 10 minutes or steam. Cauliflower should not be completely cooked, just soften a little.

It is very good cauliflower prepared like this, and we liked it so much that yesterday and until today we finished it (we are only 2 :)).
I used the classic panel for both snacks and vegetables (pumpkin), but when I saw how easy it is to make cauliflower with breadcrumbs, I decided to use your recipe from now on.
I intend to try the breaded mushrooms soon, because those are also delicious.
PS: For an extra flavor, in beaten eggs I put crushed garlic and some spices (because I'm a big fan): cumin, coriander, a little white pepper and thyme, all given by the grinder.
