- 500 gr eggplant [now frozen]
- 1 small onion
- 3 tablespoons oil
- 1 large tomato
- 1 olive
- a few peppercorns
- 5 cherry tomatoes
Preparation time: less than 15 minutes
HOW TO PREPARE RECIPE eggplant salad with ladybug - post:
- the onion is cut into quarters and mixed with a food processor.
- add eggplant, salt and oil. mix with the onion.
- it is decorated as desired, the ladybug being obtained from tomato, olive and black peppercorns.
mix the eggplant very little, if it is too crushed, the salad will not be as tasty.
