- knob of butter
- 500g fresh spinach leaves, washed, stems removed
- 1 small onion, chopped
- 4 Dover sole fillets
- 4 slices of parma ham

- Preheat the oven to 180 C / Gas 4.
- Add the spinach leaves and chopped onion to a saucepan with a knob of butter. Cook over low heat for 3 minutes.
- Lay the fillets out, then add a slice of parma ham and a layer of the spinach mixture. Roll the fillet up and close with a skewer.
- Transfer the rolls to a baking dish and bake for 10 minutes until the sole fillets are cooked through. Serve with the remaining spinach.
