The speculoos cheesecake is a particular recipe that comes directly from the Anglo-Saxon world. It is a dessert with a base of cinnamon flavored biscuits (the ideal would be to use speculoos biscuits directly) and a delicious filling made with yogurt, philadelphia, white chocolate and speculoos cream of course. This cheesecake is really very special and if you like these flavors, you should definitely try it. How to make speculoos cheesecake
Start by preparing the cheesecake.
Finely blend the biscuits together with a pinch of salt.
Melt the butter and mix it with the speculoos cream.
Add the butter biscuits and mix, then use the mixture to cover the bottom of the mold, pressing it well with your fingers to create the base and also a little edge.
Refrigerate for 1 hour to solidify.
Prepare the filling now.
Put the yogurt, philadelphia and cinnamon in a bowl and mix.
Melt the white chocolate (in a double boiler or in the microwave).
Add the speculoos cream and mix.
Spoon the chocolate cheese mixture into it and mix well.
Gently squeeze the gelatine, previously softened in cold water, and dissolve it well with 1 tablespoon of boiling water.
Immediately add the melted isinglass to the filling and beat the mixture vigorously with whips to mix it well.
Take the mold out of the fridge, pour the cheese mixture on the base and level well.
Refrigerate and leave to harden for 6 hours before serving your speculoos cheesecake.
