The spinach risotto is one of my favorites, a dish full of flavor, practical and quick to prepare and to be prepared preferably with fresh seasonal spinach. I had wanted to prepare the spinach risotto for months, but my boyfriend doesn't like vegetables and I hate cooking just for me, but with the promise that the next risotto will be with sausage, I convinced Ivano to "make the sacrifice" for this time :) In the end he promoted me the spinach risotto, saying that the flavor was very delicate and he also did an encore ... the usual suspicious :)

Method
How to make spinach risotto
Sweat the chopped onion in a saucepan with the oil
Now add the washed and cleaned spinach and let them flavor in the sauce
Then with an immersion blender, chop them coarsely
Add the rice and toast it in the sauce.
Wet the rice with the white wine
Now start adding the boiling broth to the spinach risotto one ladle at a time.
Always stirring, cook the risotto adding the necessary broth, always a ladle at a time, until it is cooked.
When cooked, turn off the heat, add the grated Parmesan cheese and mix. Cover the pot with a lid and wait a couple of minutes before serving the risotto on the plate.
Serve the risotto on plates by adding a sprinkling of pepper and more Parmesan directly on the plates.
