I already knew what he would answer me, so I made meatballs and sarmalute. I still have sarmale tomorrow, even the day after tomorrow, but the meatballs disappeared in less than 10 minutes.

My recipe for mackerel meatballs is very simple. First of all we need a quality mackerel, I used Lotka mackerel fillets in olive oil, then some white potatoes, and, ideally, homemade breadcrumbs, not very fine, and country eggs. I won't tell you how tasty these meatballs with potatoes and fish are!

Canned mackerel Lotka fillets in olive oil contain 70% mackerel fillets, 28.7% olive oil and salt. The most important thing for me is that Lotka products do not contain E's or preservatives.

I ate them plain, my husband with some homemade ketchup. If you manage not to eat all the meatballs immediately after removing them from the pan, I tell you that a salad goes perfectly with them.

Fasting meatballs from potatoes and rice - recipe

ingredients

  • 2 white potatoes
  • 50 g of round rice
  • 1 onion
  • 3 cloves of garlic

Method of preparation

Wash the potatoes and boil them in their skins. They will be much tastier than peeled boiled ones.

After they have cooled, remove the skin and pass with a puree tool or a fork.

Wash the rice and boil it with 150 ml of water. Add a little salt. After boiling, allow to cool.

While the rice is boiling, peel the onion and garlic. Finely chop the onion and sauté it in a little oil until it becomes transparent.

When the mashed potatoes and boiled rice have cooled, mix all the ingredients in a bowl, including finely crushed garlic, salt, pepper, paprika and finely chopped parsley.

Preheat the oven to 180 degrees Celsius. Line the oven tray with oil and baking paper.

If the composition of the meatballs is soft, you can add 1 tablespoon of flour.

Moisten your hands in water and shape the composition into balls, giving them the appearance of round or oval meatballs, as desired. Meats can be smaller or larger.

After filling the tray, place it in the hot oven and let the meatballs bake for 25 minutes. After this interval you will have to turn them with a spoon.

Let them brown on the other side for a quarter of an hour, then remove them with a spatula on a plate.

Allow to cool, then serve. They are just as good and warm and cold.

They can be served as such, with a salad of vegetables or greens, or with a dish of mushrooms or vegetables.

Although, for this recipe, new or small potatoes are indicated, it is also prepared with larger diced potatoes. The combination is delicious, the cream sauce gives it a great taste and, along with a salad, you have a simple and good lunch or dinner.

  • 2 tablespoons oil (for greased tray)

How to prepare meatballs with baked potatoes

First prepare the meatballs. Soak the bread slice in water. In a large bowl put the meat, egg, onion and garlic given by the small grater, spices, greens and then bread squeezed very well by water. Mix well to blend the ingredients well and set aside to rest.

Put the dish back in the oven for another 15-20 minutes or until the food is nicely browned. When ready, sprinkle with fresh parsley or dill, if you prefer. Eat it hot, with your favorite salad. Good appetite!
