Ingredients for the vanilla top:

  • 5 eggs
  • A pinch of salt
  • 60 ml vegetable oil with neutral taste
  • 120 g caster sugar
  • 130 g white flour type 000

  • 500 g mascarpone
  • Grated peel of 3-4 limes, only the green part, depending on how big they are

  • 350 g whipped cream

  • A pinch of salt
  • 70 g caster sugar
  • 50 g ground walnuts / hazelnuts
  • 150-200 g of berries

Preparation for the vanilla top:

Preheat the oven to 175 degrees Celsius.

Wallpaper the bottom of a round tray 26 cm in diameter with baking paper.

Beat the egg whites with a pinch of salt until they leave light waves like soft snow. Gradually add the sugar and continue beating until you get a firm and glossy meringue.


Add the yolks mixed with the oil and mix gently.

Incorporate the sifted flour into 2 slices and mix gently with movements from bottom to top until all the flour is incorporated.

Pour the composition into the tray, level it and put it in the oven for 28-30 minutes or until it passes the toothpick test.

Remove the tray from the oven and leave it for another 10 minutes, then remove the top on a grill to cool.

Preparation for mascarpone cream with lime:

In a bowl put the mascarpone, lime peel, powdered sugar and mix gently with a spatula until soft.

Add the whipped cream and mix until you get a fine and light cream. Do not mix more as it will harden.

Preparation for the crunchy layer:

Preheat the oven to 130 degrees.

Wallpaper an oven tray with baking paper.

Beat the egg whites with a pinch of salt until you get a soft snow-like foam. Gradually add the sugar and mix until it melts and the meringue will be shiny and consistent.

Add the ground walnuts and mix gently with movements from top to bottom until incorporated.

Pour the composition in an even layer about 1 cm thick, on a tray lined with baking paper and put it in the oven for 60-70 minutes or until it becomes crispy. We turn off the oven, and leave the tray inside with the door ajar until it cools completely. I made it round to practice the perfect drawing of a circle, but it can be cast in any shape.

After complete cooling, we break it into pieces of different sizes and let it dry well on the tray.

Cut the top into 2 equal parts.

Grease the top with 1/4 of the cream, distribute the fruit evenly.

Grease again with 1/4 cream.

We come with the second countertop and cover the cake with the rest of the cream. Let cool for 3-4 hours. Garnish with meringue pieces with walnuts, fruit and it is ready to serve. Good job and good appetite.

  • 400 ml whipped cream
  • 6 tablespoons powdered sugar
  • 1 sachet of gelatin
  • 75 ml of cold water for soaking gelatin
  • 300 g fresh fruit (banana, pieces of peeled orange, blueberries)

  • 200 ml whipped cream
  • 2 tablespoons powdered sugar (if whipped cream is not sweetened)
  • 1 whipped cream hardener (optional, to make the whipped cream stronger)

WORK PLAN refreshing cake with yogurt cream and fruit

Prepare the top: separate the egg whites from the yolks. Beat the egg whites and, towards the end, add the sugar.

Separately, in another bowl, mix the yolks and gradually pour the oil and mix at low speed.

We then incorporate them into the egg whites with a silicone palette. Sprinkle flour mixed with baking powder (sifted) and mix with a spatula.
We place the obtained composition in a shape (diameter 24 cm) lined with baking paper.

Leave it in the hot oven for about 30 minutes, at 180 degrees, until it passes the toothpick test.

Let the countertop cool, then cut it into two pieces.

For the cream, mix the fatty yogurt with the powdered sugar.

We hydrate the gelatin in 75 ml of cold water for 10 minutes. Then put it on low heat and mix with a teaspoon until the crystals completely dissolve (without reaching the boiling point, because otherwise it loses its properties). Let it cool a bit, then add it to the yogurt mixture. Mix the whipped cream until it becomes firm and add it to the yogurt cream. Then add the finely chopped fruit

and mix with a silicone spatula. The cream thus obtained is left in the fridge for a while, then we spread it between the 2 sheets of the worktop, put in the shape in which the worktop was baked. We will also place the detachable ring so as not to risk the cream flowing, because it will be more liquid until it hardens from the gelatin.

We will leave it in the fridge for at least 4 hours, then we will be able to decorate with whipped cream (200 ml whipped cream for garnish). We can place blueberries or other fruits on top, or we can sprinkle coconut, chocolate flakes, depending on your preferences.

Recipe of cake without baking with yogurt and fruit is exactly what we need during the summer. The truth to start the oven on such a heat is all we need. We make an infernal heat in the kitchen, we sweat profusely, so we better give up and be content with a ice cream. For these reasons I thought that a dessert without baking is ideal. In addition, I added a lot of fruit and yogurt, so it will be refreshing and very tasty. I love desserts without baking, and especially fruit desserts, as it is diplomat cake or tiramisu.

For this cake without baking with yogurt I used a top of biscuits, a blueberry cream of yogurt and mascarpone and fresh fruit. I chose raspberries, strawberries, blueberries and blackberries. Of course you can use your favorite fruits. Currants go very well, as do gooseberries. You can also use peaches, apricots, mangoes, pears or any fruit you want. For the cream I also used Greek yogurt, with 10% fat and mascarpone. You can also put weaker yogurt, but keep in mind that it will be more liquid and sour. If you do not want to put mascarpone, you can put whipped cream in half.


How to prepare cake with yogurt cream and berries

I made the top out of ground biscuits, just like in cheesecake recipes. Yeah Al that sounds pretty crap to me, Looks like butter aint for me either. I said then that I will also make a cookie sheet when I am in a time crisis! No, it happened to me! But he was good and fast, he caught me well.

With yogurt cream, there's no point in telling you, it's that simple! Let's see!


Yogurt cake, what tray do we use to assemble it?

To assemble the cake without baking with yogurt, I used a tray of cake made of silicone. You can also use an ordinary tray, but you will have to cover it with plastic wrap on the inside. This way you just flip the cake over and remove the foil. Without foil, the cake will stick to the shape and will not be easy to remove. You can also use a round tray, but keep in mind that you have about 1 kilogram of composition. You need a small tray with a diameter of 20-21 cm. For a 28 cm tray you will have to double the amounts for the cream. You can replace the biscuits with a cookie sheet or a cake top.

To thicken the cake without baking with yogurt, I added a little gelatin to the composition. For flavor I added berry essence and vanilla sugar from Cosel. You can garnish the cake with fresh fruit or fruit sauce. It is good and a little whipped cream or some mascarpone mixed with powdered sugar. Leave the cake in the fridge for at least 4 hours, then you can enjoy it. You can also do it for the little ones by replacing the sugar with honey and excluding the biscuits. Preparation Cake with yogurt cream

Separate the egg whites from the yolks. Whisk the egg whites and then add half the amount of sugar and lemon / orange juice until the composition becomes dense, hard and shiny.
The yolks in which the salt powder was put are beaten with the rest of the sugar and 1 sachet of vanilla sugar until it melts and forms a foam, the oil is added / incorporated.
Pour the composition over the beaten egg whites, sift through a sieve all the amount of flour and then mix with a spatula & # 8211 by turning the composition from top to bottom and then put in the form 24/26 / 28 cm lined with parchment paper. baked and bake over medium heat for about 20-25 minutes & # 8211 until golden.
To see if it is baked, do the toothpick test. When it has cooled, cut it to obtain 3 or 4 sheets of countertop (depending on how much the countertop allows)

Put the gelatin soaked in the juice from the compote in which the sugar was added for about 15 minutes, then heat it in a bain-marie, stirring well until it is completely liquefied (do not boil!). Leave to cool.
Beat the whipped cream until it hardens.
In the amount of yogurt, pour the liquefied gelatin and mix well, then add the whipped cream, stirring lightly.
In the form in which the countertop was baked, put a food foil that will reflect far enough over the edges of the form (if it is not high enough, it is completed / high with a thin cardboard foil)
Place the countertop sheets one by one, over which the creamy composition is poured, in which the crushed fruits will be sprinkled in abundance. The last top will remain uncovered by the cream because it will be glazed at the end.
Refrigerate for 6 to 8 hours.
After the necessary time has been in the fridge, the cake will be removed from the mold and placed on a plate wide enough to be decorated with biscuits that will be glued edges and, for safety, a ribbon will be tied around it. it can be an extra ornament that will give the cake elegance.
For decoration, melt the white chocolate in a bain-marie over which 2-3 tablespoons of milk can be poured so that it can flow and can be spread nicely over the counter and can penetrate a little between the biscuits. When the chocolate hardens, the biscuits will no longer come off the counter.
It is decorated according to pleasure and inspiration.

For the countertop I used some wholemeal biscuits, with cinnamon, very cheap from the trade (from Lidl). These are the cookies I like the most for this kind of countertop. If you make the diabetic cake, choose some diabetic cookies. We also prepare the butter in a saucepan and melt it.

Grind the biscuits well and add them to the melted butter and mix. The cake is mounted directly on the desired plate.

Place the detachable ring in the shape of a 26 cm cake or a special ring and distribute the composition evenly until it is warm. The first time we make sure that the biscuits are evenly distributed and only after that we level. With your hand or the smooth bottom of a glass, press the biscuits until the top is formed. The surface must be uniform and smooth. The top of the butter biscuits is left to cool for an hour.

How to prepare yogurt cream with whipped cream and fruit?

For the cream, beat the natural whipped cream, well cooled beforehand, add the powdered sugar and vanilla. You can find more information on how to beat whipped cream correctly here. If you want to make the diabetic cake, add sweetener instead of powdered sugar.

Cut the fruit (I used peaches from compote) into cubes and keep a few slices for decoration. Drain well in a strainer.

Then mix the yogurt with the fruit. The fruit must be well drained. If you want to make the cake for diabetics, you will choose a slightly sweetened compote or special for them.
