RECIPE PREPARATION Mosaic cake:

Ingredient:
Top I: 6 eggs, 6ling sugar, 6ling flour, 3ling oil, 3ling water, a pinch of salt.
Countertop II: 7 egg whites, 7ling sugar, a cup of roasted and chopped walnuts, 1 cup of diced shit (I didn't have enough and topped with diced chocolate), a cup of cherries, 1/2 cup of flour, a powder baking powder, salt powder.
Cream: 7 yolks, 1 cup sugar, 3 tablespoons milk, 250g butter, vanilla
Glaze: 100gr chocolate, 2ling milk, 3ling oil

Method of preparation:
Top I: The egg whites are separated from the yolks. The yolks are rubbed with a pinch of salt. Gradually add the oil and mix. Then add the water. sugar and mix until completely melted. Over the egg white foam add the egg yolk mixture and mix slowly with a spatula. Then incorporate the flour with slow movements, from bottom to top. The composition is placed in a tray lined with parchment paper. Bake and put in the preheated oven. It is ready when it passes the toothpick test. Remove and leave to cool.
Top II: Beat the egg whites with a pinch of salt. When they stick to the walls of the bowl, add the sugar gradually and mix until it melts. Add the walnuts, cherries, shit and flour with the baking powder. Mix slowly with a spatula. The composition is poured into the same tray in which the first top was baked and put in the oven. It is ready when it passes the toothpick test. It is removed and left to cool.
Cream: Rub the yolks with the sugar, milk and vanilla essence on a steam bath until it thickens. When it has reached the desired consistency, remove from the heat and let it cool. Rub the butter. Gradually add the egg cream. and mix.
Glaze: the chocolate melts on the fire together with the milk and oil.
The top I cut in two, horizontally, resulting in two sheets. On one of the sheets spread half of the cream, put the egg white top over which lies the second half of the cream. Cover with the second sheet of top, and on top pour the icing.
Let the cake cool until the icing hardens. Cut with a damp knife.

Tips: You can replace the countertop sheets at the base and on top with wafer sheets.

The recipe is for a tray of size 25 & # 21535 but you can make it in a slightly larger tray, there is no problem if it comes out thinner.

  • 7 egg whites
  • 150g old cough
  • 120g white flour 000

1. Preheat the oven to 170g C.

Add the cranberries and finely chopped walnuts and mix gently until incorporated into the top.

Pour the dough into the tray in which I put baking paper and bake for 35 minutes. For more safety, test with a toothpick, the countertop should be slightly brown when ready.

Remove the tray from the oven and let the countertop cool then detach it from the baking paper and place it on a wooden plate or bottom.

2. For the pandispan sheets, mix the egg whites from the 4 eggs with a little salt, then gradually add the yolks, mix well and gradually add the flour, stirring over the head until it is completely incorporated. Bake the sheets for 20 minutes. I made a single sheet in the large stove tray because it is exactly twice the size of the cake tray.

If you bake the top in a larger tray then use 6 eggs, 6 tablespoons of sugar and 6 tablespoons of flour for the pandispan sheets.

Remove the tray from the oven, let the sheets cool a bit and then turn them upside down and peel them off the baking paper (in my case a single large sheet that I cut in half as I wrote before). We leave them aside until we prepare the cream.

3. Mix the yolks well with the pudding powder and sugar and gradually add the preheated milk. Put the composition in a pot with a thicker bottom and then put it on low heat, stirring constantly until it thickens like a pudding.

Cover it with a foil so that it does not make a puddle on top and let it cool well.

When it has cooled completely, add a piece of butter, mixing well after each one. When we have incorporated all the butter, add the vanilla essence and mix lightly. We get a fine vanilla cream.

4. To put on top we leave two tablespoons of cream and we start to assemble the cake with pandispan sheet, cream, countertop, cream, pandispan sheet, a little cream and then grated chocolate or coconut flakes.

Let the cake cool for 3 hours and then cut it with a knife previously passed through hot water.
